The Last Supper

Try not to take the title of this post too seriously. If you have, you’re probably taking yourself too seriously to begin with. We have been jokingly calling tonight my last supper. All in good spirits.

Last week Sadi and I befriended Chris, the owner of a charming little family restaurant named The Restaurant. The name is originally unoriginal. The food is absolutely brilliant! 

Side Note: Despite the presentation of their website, the atmosphere is much more welcoming and feels like coming home as soon as you walk through the door; check their photo gallery.

Over the past week and a half, we’ve stopped in and chatted at length with Chris and even had a bit of time chatting with his father and brother. They are Minnesota natives, but spent over a decade living in Boulder, Colorado. As soon as he found out we were from Colorado as well, we instantly formed a camaraderie.

I wish we weren’t on such a tight budget these days because we would have spent every one of our dinners with Chris and The Restaurant. Fortunately, Chris was really cool and said we were welcome to come hang out on their front porch anytime and have some tea and abuse their wifi. Which we did on more than one occasion.

Tonight being the night before my surgery and with my mom coming into town today, we decided to splurge for once. Can you really blame us?

We knew we’d want to have my last supper at The Restaurant and made arrangements with Chris yesterday afternoon. I requested a meal that wasn’t on the menu and he was more than happy to oblige. I’m sure you’re salivating with interest to know what my palette had in mind...

I started with a bowl of fresh butternut squash soup and a delectably dry Malbec. The main entree was a center cut N.Y. strip topped with a most wonderful stinky bleu cheese and sides of purple mashed garlic potato and fresh steamed al dente carrots and green beans. The Malbec continued. Dessert followed with a rich, dark chocolate torte.

The only thing that could have made tonight’s dinner much better was if more of my family were able to be with us.

The hour is getting late and I have to be at the hospital by 5:45 a.m. tomorrow. Please keep me in your positive thoughts and energy all day tomorrow. Sadi will continue writing on TumorVille during my absence with updates of the surgery.

Chris, his family, and his restaurant sound wonderful.  I am so glad you all had such an enjoyable dinner.  

The Eaton-Rowe's and Eaton-Schram's will be sending TONS of good thoughts your way tomorrow.  Can't wait to see Sadi's post stating all went super!

It was a wonderful dinner. I has seared sea scallops on purple garlic mash potatoes and wilted frisee, Mmmmmmmmmmmmmm...

Chris is a wonderful host and his Brother and Father are fantastic in the kitchen.
